玉米抗性淀粉在食品中的应用

摘要:本试验以玉米抗性淀粉原料,将其添加于食品中,考察其作用。结果表明:玉米抗性淀粉添加于食品中可以改进食品品质,通过感官评价,添加到花卷中玉米抗性淀粉的最佳添加量为4%,添加到核桃乳饮料中玉米抗性淀粉的最佳添加量为0.6%。

Abstract: This experiment to corn resistant starch as raw material, added to food, to investigate the effect. Results show that: corn resistant starch added to food can improve food quality, through sensory evaluation, add to Hanamaki maize resistant starch in the optimum adding amount is 4%, added to the optimum addition amount of the walnut milk beverage of corn resistant starch is 0.6%.
